Soft-Boiled Eggs, Avocado and Olives

(2 servings)

  • 3 eggs
  • 1 avocado
  • 6 Kalamata olives
  • (optional) smoked salmon
  • (optional) avocado oil mayo
  • (optional) lemon juice
  • (optional) coarse sea salt
  • (optional) fresh parsely

Boil the eggs for 7 minutes, let them cool down and remove the shells. Meanwhile, cut the avocado in half (lengthwise), and then cut each half into 5 wedges or slices. Halve the eggs and serve 3 halves with 5 avocado slices and 3 olives.

If you’re adding salmon, lay it on a tray and squeeze some lemon juice on top. Add salt, eggs, avocado, olives, parsley and mayo (if you want). Enjoy!

It makes for a snack or a starter.
