
- 1 cup cooked quinoa
- 150g smoked mackerel
- 1 bell pepper (red or yellow)
- 3 baby gem lettuce leaves
- 1 tsp pumpkin seeds
- 1 tsp sunflower seeds
- 5 cherry tomatoes
- freshly squeezed lime juice
- sea salt
- 1 tsp EVOO
- fresh parsley
- (optional) sprouts of choice
- (optional) 1/4 sweet potato (steamed)
- (optional) sauerkraut or kimchi
- (optional) 1 soft-boiled duck egg
Chop and slightly steam or sauté pepper and tomatoes. Combine them with the rest of the ingredients in a large bowl. Enjoy!
