Lamb Chops and Baked Potatoes

  • 3 lamb chops
  • 2 small potatoes
  • 1 small carrot
  • 2 cherry tomatoes
  • rosemary
  • Fresh mint leaves
  • 1 tsp butter or coconut oil
  • salt
  • pepper
  • (optional) fresh lemon juice

Preheat the oven at 220C.

Chop potatoes, carrot and rosemary. Add in tomatoes, butter, salt and pepper and bake covered for 45 minutes. Uncover and keep baking till golden and crispy (about 15 minutes).

In the meantime, grill or pan-fry lamb chops (whichever you prefer) for approximately 2 minutes on each side. Once ready, sprinkle with salt and pepper, serve with baked potatoes and garnish with fresh mint leaves (and lemon juice, if you want). Enjoy!
