Guilt Free Cookies

  • 2 egg yolks
  • 50g butter
  • 1/2 cup coconut flour
  • 2 tbsp oats or oat flour
  • stevia
  • pinch of sea salt
  • (optional) cinnamon
  • (optional) vanilla extract
  • (optional) cacao nibs or chocolate chips

Preheat the oven at 180C.

Mix egg yolks, butter, salt and stevia in a bowl. Add coconut flour, oats (or oat flour), spices and chocolate chips (if you like). As the texture of the dough varies depending on the quality of the flours, feel free to adjust the quantities until you reach a cookie dough-like consistency. With a spoon, spread the mix on a baking sheet into as many cookies as you can. Bake for approximately 15 minutes and let cool down for other 15 minutes. Enjoy!
